of me I'm also preheating theoven to 400 degrees I want to make thatskin super crispy so I'm gonna reach inmy box of goodies here and get someavocado oil love this stuff just give ita little spritz on top of the skin thena generous pinch of salta few cracks a black pepper flip thechicken over and do a little more saltand pepper alright let these guys skinside up one more time and the reason Ido a little shot of oil on there is tohelp the skin get crispy crispy chickenchief chowder ons are life if you don'tknow what I'm talking aboutwait one hour until he's come out andyou'll see all right you guys while thechicken is doing its thing let's getrolling on the low carb cloud breads Iactually haven't made these with you butif you're in the keto community this isyour go-to low carb bread and I'm gonnamake it in the shape of a bun tosandwich in between the creamy chickensalad and Monch on it it is gonna be inthe ball is it a monster munch mostpeople lunch but I guess I'm much okayall right for that we need six eggs I'mgonna separate the whites from the yolksso to do that I'm very carefully gonnacrack it into a ramekin and pour the egginto your hand and then carefully letthe white fall through and place theyolk in another Bowl this is really atough assignment for me because thesepaws are super clumsy but you have to becareful because if you spill any of theyolks into the white you have to startover the yolks prevent the whites fromgetting a stiff and becoming like a nicemeringue so very carefully let all theegg whites fall through last egg yolkgoes into the bowl then add a quarterteaspoon of cream of tartar to the eggwhites the cream of tartar will help theegg whites stabilize and to get them tothe stabilization point just take somehand beaters here and whisk togetherthat's watching me like a hawk let's seeif she approves over these Peaks that'sgood manall right so look at the whites guys youwanted to really hold their shapebecause the more air you can beat inthere the more cloud-like your bread isgonna be and in the bowl that has theyolks I'm gonna add the fat probably themost important thing about this recipeis using full fat cream cheese androom-temperature this has been sittingout for an hour you want it to be softand pliable so it mashes into the eggyolks I'm gonna measure 1/4 cup of thecream cheese use a spoon to pack it to alevel quarter cup add it to the bowl andthen measure 2 more tablespoonsdamnit don't even bother rinsing off thetips of the hand mixer just beat the eggyolks together with the cream cheesevery slowly okay that looks good youguys and see even if there's littleflecks of the cream cheese in therethat's fine that's gonna bake out but ifthe cream cheese is cold you won't getthat kind of emulsification orincorporation in there and it's gonna bekind of broken so let me put this to theside grab my spatula it's cloud isbecause we take about 1/3 of the eggwhite mixture here put it into the fatand we fold don't mix this is wherebaking comes in I should really haveJessi on camera doing this because thisis a baking technique that you do withmeringues or souffles you're justfolding the egg whites into the fatwithout mixing and disturbing all thosebeautiful air bubbles in there then addthe last of the egg whites as beautifulnow take 1/2 cup measurer and then scoopsome of the mixture into that and put iton a sheet tray that's lined with someparchment paper then once it goes downuse a spoon to flatten it down a littlebit but you still want it to be kind oftall like a cloud last one is down andthen grab some dried oregano pinch itover the top and then a little snowshower of Parmesan cheese or pecorinoromanoI love adding the parm and the oreganobecause it kind of reminds me of like anItalian of foam kasha now I'm gonna popthese in the oven at 300 for 27 or 30minutes oh yeah come on I'll show youwhat she's talking about come here babewhere did the chicken go I may havemoved the chicken to my neighbor's ovenbecause I didn't want to wait the fullhour for it to come out and then cookthe cloud bread otherwise you have to dothat I want to get this cooked and in mybelly as soon as possible all right wellthat is doing its thing let's make thecreamy dressing that we toss the roastedchicken in alright for the Mayo dressingI'm gonna put some avocado oil Mayo intothis bowl normally I don't buy thisstuff at the market because it'sexpensive but I got it on thrive marketfor 30% cheaper than my local organicgrocer and I love avocado oil andso I had to buy it so let's scoop inabout 3/4 of a cup you can see it'savocado oil by the green tint of theMayo next up we need some lemons youknow I've been doing a lot of zesting inthe house when you see a lemon like thisin the fridge but all you do have to useesta lemon is a wrap it in plastic wrapand then put it in the fridge it'll stayfresh let's start with the juice of halfa teaspoon of stone-ground mustard Ilove this stuff because you can see themustard seeds in there now my maildressing gets a little funky you mayhave seen me do this dressing on myInstagram lives or my Instagram storiesbut go ahead and splash in a teaspoon ofcoconut amino acids if you're on ketothis is your best friend because it'slow carb and then splashy and half ateaspoon of toasted sesame oil all rightI know the first thing come into yourmind is is a flavour of the dressinggonna be Asian the answer is no it justgives it a real depth of flavor or whatpeople call it MAMEnow I'm gonna whisk it up and you couldstop there I'm calling that my basicgo-to mayo dressing but I do need to adda little bit of salt and pepper about1/4 teaspoon of salt and a few cracks ofblack pepper you know we're not going tostop there obviously the next twoingredients are kind of Asian is alsobut they're really really tasty I'mgonna squirt it in a little bit ofsriracha or hot sauce any kind of hotsauce works about a teaspoon and then ateaspoon of tahini paste if you grew upin the Middle East this is your versionof peanut butter it's not Eve bitter anda little earthy and once again it has aninsane depth of flavor to this Mayo andthen I can just little more dressingI want this super cream oh so I just putit all in that is good babyall right my friends now it's all aboutthe keto fixings to make this guyover-the-top I did roast to thick slicesof bacon before the video started alittle salty nuggets of joy we'll add alot of flavor add 1 cup of choppedcelery along with some parsley throw inabout 2 teaspoons of that about 1/4 cupof sliced green onions then we need somecrunch in this guy's so let's add 3tablespoons of roasted and choppedpecans pecans are very keto friendly allright now I'm gonna mix up all thatgoodness Wow how
